WINEMAKING
The harvest was made rigorously by hand. The grapes were macerated for a short period (between 2 and 4 hours) and then were subjected to soft pressing. The obtained juice was done at cold decant for about 24 hours.
The fermentation took place in steel barrels at a controlled and constant temperature between 16°C and 20°C for about 2 weeks.
The wine was aged in steel tanks and large wooden barrels on its yeasts for about 9 months with frequent “batonnage”.
ORGANOLEPTIC DESCRIPTION
The color is straw yellow with greenish hues. The delicate and gentle aroma, reminiscent of dried fruit with a slight almond aroma. The palate is full bodied and with a pleasant softness.
SERVING SUGGESTIONS
It goes well with appetizers, fish dishes but also soups and white meats. Particularly suitable to accompany ham, even when lightly smoked. Best served at a temperature of
10°C -12°C degrees.
